Ingredients for Meatloaf:

  • 1lb 80/20 Hamburger meat
  • 1lb Johnsonville Hot Italian Sausage
  • 1/4 Cup Diced Hatch Green Chiles or a 4oz can
  • 2 Eggs
  • 1 tbsp SPG (salt, pepper, garlic)
  • 1tsp salt
  • 1/4 Cup ketchup
  • 1/4 Cup BBQ sauce (I like Sweet Baby Ray’s Original)
  • 1 Large tube of Ritz crackers crushed (or 3 small tubes)
  • 1 1/2 Cups of shredded cheese (I use Chihuahua cheese found at Walmart. Use your favorite)
  • 1 Medium diced onion

Smoked Brisket Mixture:

  • 1 Cup of leftover shredded or pulled brisket (You can use chicken, pulled pork, or?)
  • 1/4 Cup diced Hatch green chiles (I used Hatch Red Chiles, but they are not sold in stores)
  • 3/4 Cup shredded cheese (I use Chihuahua cheese found at Walmart. Use your favorite)

Directions:

  1. Preheat your pellet grill to 250 degrees Fahrenheit.
  2. Combine all the meatloaf ingredients, mix well and set aside.
  3. Combine brisket ingredients in a separate bowl and mix well.
  4. Free form, or use a bread pan or large aluminum bread pan and form or add your meatloaf mixture and press tightly to form your brisket stuffed meatloaf.
  5. I find that using a 16 oz beer can works great to create a cavity for the brisket. So, press a can or hands to form a cavity.
  6. Add your brisket mix into the cavity.
  7. Place the Brisket Stuffed Meatloaf in your pellet grill.
  8. Smoke for 1 hour at 250 degrees fahrenheit
  9. After 1 hour, check the temperature of your meatloaf. You want it to be 160 degrees fahrenheit. If it’s not, let it go another 30 minutes.
  10. Once your meatloaf hits 160 degrees fahrenheit, brush on some BBQ sauce on the meatloaf portion, but not over the brisket.
  11. Add some shredded cheese over the brisket part.
  12. Return to the pellet grill for another 30 minutes.
  13. Remove and drain any excess grease and let cool for 10 minutes before you server it.
