Ingredients:
- 1 Whole Chicken around 5 – 6lbs
- 12 Cups of chicken stock, (or 3 32oz boxes) plus 1 – 2 cups water
- 3 – 4 Carrots sliced into about 1/2 inch slices
- 1 Medium onion diced
- 3 Cloves of garlic finely diced. I cheat and use the jarred garlic
- (optional) 1/2 Cup Hatch Green Chiles dices. Add more if you like it spicier
- 1 24 ounce bag of Reames frozen egg noodles or homemade (find at Walmart)
- (optional) 2 Celery Stalks
- Salt and Pepper to taste
Directions:
- Add your chicken and 4 cups of chicken stock plus 1 – 2 cups water to a large stock pot. This is one of the keys to this easy chicken noodle soup recipe.
- Let boil for 45 minutes
- Remove chicken and let cool for 15 to 20 minutes or until you can handle it.
- Remove all chicken skin, and meat from the bones and shred with hands. Very important to remove all bones, skin and any unwanted fat.
- Add shredded chicken meat back into the pot
- Add 8 more cups of chicken stock
- Add in your sliced carrots, diced onions, and garlic
- Simmer for 25 – 30 minutes
- Carefully add the 24oz bag of Reames egg noodles and mix well
- At this time if your soup looks like it needs more liquid, add 1 – 2 cups of water or chicken stock if you prefer.
- Simmer 30 to 35 more minutes and it’s ready to serve!
