Here's my out of the pantry Huevos Rancheros.  When we go to Mexican restaurants in the morning we will amost always order their huevos rancheros.  But one morning I didn't feel like going out to a restaurant but I was craving huevos rancheros!  So I checked out our pantry to discover that we had canned potatoes, white kidney beans and green chile sauce!  Yeah, some may think it's not authentic but in The Man Kitchen sometimes your pantry can produce some great meals!  You just have to see what's there and what can be made and 9 out of 10 times it turns out great!

Out of the Pantry Huevos Rancheros for Two!

INGREDIENTS:

4 eggs
4 corn tortillas
2 flour tortillas
1 can beans (Pinto beans preferred but I used white kidney beans because that's what I had. Black beans work well too.)
1 can sliced potatoes drained (sure you could dice or slice potatoes and fry, but hey!  I had already sliced potatoes in a can!)
1 can green chile sauce (yeah, you could make your own sauce but why when you have a can in your pantry?  I used Stokes Green Chilie Sauce with pork)
1 cup grated cheese ( I used a package of 4 cheese blend shredded Mexican cheese)
2/3 cup cooking oil

DIRECTIONS:

Start heating your beans and chile sauce (seperate pans) on low heat while you fry your potatoes. 
Add about a 1/3 cup of oil to a pan and start frying your potatoes. 
(If you pat dry your sliced canned potatoes first it will help keep them from sticking to the pan.)

Heat 1/3 cup oil in a seperate pan to fry your eggs in.
Before your fry your eggs:
Place 2 corn tortillas at a time in your heated oil to soften your tortillas and place 2 on each plate.
Fry your eggs how you like them. We prefer over medium.

Now you should have 2 corn tortillas on each plate.  Add 2 fried eggs on top of your corn tortillas, add potatoes and beans to the side of your eggs, smother your eggs with the green chile sauce, top with cheese and serve with a heated flour tortilla (best to heat over stove).

Very easy to make and very delicious!  Hope you enjoy and don't be afraid to modify this to your liking :)
