What do you do when you discover you bought a bag of potatoes when you already had one? Make Cheesy Potato Soup New Mexican Style!
INGREDIENTS:
6 - 7 medium potatoes diced
1 medium onion diced
2 celery stocks diced (about a half cup)
3 Hatch Green Chiles roasted peeled and diced. (or 1 small can)
1 32oz carton of chicken broth
1 cup water
1 cup milk
3 Tbls all-purpose flour
2 cup or 8oz bag of cheddar cheese
DIRECTIONS:
For a real treat, top with some crumbled bacon and either green onions or chives in each bowl.

1 cup milk
3 Tbls all-purpose flour
2 cup or 8oz bag of cheddar cheese
DIRECTIONS:
- In a 6 quart slow cooker add potatoes, onion, celery and chicken broth and water
- Cover and cook on low for 6 - 8 hours
- Add the green chiles at about 4 hours in
- In a small bowl, mix the flour into the milk
- After 6 - 7 hours add the flour and milk and cook on high for 30 minutes
- Add cheese and cook until melted and stir well
- Salt and pepper to taste
For a real treat, top with some crumbled bacon and either green onions or chives in each bowl.
