Nana's Glazed Ham Sticks

These ham sticks have been passed down generations and are part of every Thanksgiving and Christmas dinner. But they would also make great appetizers for any meal.  Original recipe calls for "sweet milk" but we use regular milk as back in the day, regular milk was called sweet milk as opposed to buttermilk. This recipe makes 12 ham sticks so be sure to double or triple if you have a lot of guests.

Meat Ingredients:

1 lb cured ham ground
1 1/2 lb ground fresh pork
2 eggs
1/2 cup cracker crumbs (10 Saltine Crackers)
1 cup milk

Glaze Ingredients:

1/2 cup vinegar
2 cups hot water
1 1/2 cups brown surgar
1 tbls mustard
1 tsp salt

Glaze:

Add all Glaze ingredients from above to a pot and mix well. Bring to a boil, then reduce to a simmer and simmer for 20 to 30 minutes to reduce the glaze by one third. Let cool.

Directions:

  1. Preheat oven to 250 degrees
  2. Mix Meat Ingredients together
  3. Shape like chicken legs and place on skewer sticks and place on cookie sheet
  4. Pour glaze over ham sticks
  5. Cook at 250 degrees for 2 1/2 hours to 3 hours
