Leftover Turkey Quesadilla for Two

Leftover turkey isn't just for making sandwiches!  Here I am making quesadilla's with some leftover turkey!  And it's so delicuious, you'll wish you had leftover turkey all year.  I placed this recipe under lunch, but it's filling enough to have for dinner!  Goes great with rice and beans too!

This recipe is for two.  Looking to serve more? Just double or triple the amounts.

Ingredients:

1 cup leftover turkey chopped (white and or dark meat)
2 green chiles diced (1/3 cup)
1 cup shredded cheddar cheese (I used 4 cheese blend)
4 flour tortillas (burrito size)
Butter
Sour cream
Salt
Pepper
Salsa
Guacamole

Directions for each quesadilla:

  1. Combine turkey, green chiles in a small bowl
  2. Butter 1 side of each flour tortilla
  3. Place 1 flour tortilla, butter side down in a medium heat skillet
  4. Add half of your turkey and green chile mixture onto your tortilla
  5. Salt and pepper to taste
  6. Dollop sour cream so it's inside your turkey and green chile quesadilla
  7. Top with 1/2 cup of shredded cheese
  8. Cover with another tortilla butter side up
  9. When the bottom tortilla is golden brown, turn over and cook the other side until golden brown

To serve, cut into 8 slices like a pizza.  Add some guacamole and salsa and enjoy!
