Scale and remove insides of fish. leave on tail and head, but remove the fins. Wash well in salt water. Drain.
Stuffing:
- 2 cups bread crumbs or croutons
- 1 Onion, chopped fine
- 1 green pepper, chopped
- 1 stalk of celery, chopped
- 1/2 cup butter
- 1 tsp seafood seasoning
- salt and pepper
- Mix well and place in the fish cavity. Sew the cavity closed with string or use scewers.
- Sprinkle outside of fish with salt, pepper and seafood seasoning and rub with butter.
- Wrap well in foil and bake at 350 F for 2 hours
- Serve whole on large platter (head and tail may be removed if desired and garnish with lemon wedges and vegetables)
