Frozen Choco-Mint Yogurt Pie

  • 8 Chocolate snackwell cookies crushed
  • 1 tbsp light margarine, melted
  • 2 2/3 cups vanilla, low fat frozen yogurt, softened
  • 1 tsp peppermint extract
  • 8 strawberries, sliced

  1. Mix cookie crumbs and margarine. Spread on the bottom of a pie plate sprayed with nonstick cooking spray
  2. Add peppermint extract to softened yogurt. Spread over cookie crumbs
  3. Cover with saran. Freeze. Remove from freezer approximately 10 minutes before serving. 
  4. Cut into 8 slices. Serve with sliced strawberries.
