Chicken Bacon Broccoli Alfredo-With Zoodles

This is a unique take on Chicken Alfredo that has absolutely no noodles! It has Zoodles! Zucchini noodles.  So here is what I did:

 

One jar Ragu classic Alfredo sauce:16 ounces

Three slices of bacon

One cup broccoli

One large zucchini

Three chicken breasts

1/4 cup mozzarella cheese

1/4 cups sharp cheddar cheese

One tbsp garlic powder

One tsp cayenne pepper

One tsp smoked paprika

Salt and pepper to taste

 

 

Fry up the bacon and set to the side.

Begin simmering the broccoli.

Take a vegetti and slice the zucchini. If you don't have one slice in thin slices.

Simmer in heavily salted water for 3 to 5 minutes. Drain and set to the side.

 

At this point you need to put your jar of cheese sauce in a boiler and bring up to simmer.  Once simmering add mozzarella and cheddar. Stir well and turn to low.

Sprinkle seasonings on chicken and sear on each side for about three minutes.

After your chicken has seared, place in a preheated 350 degree oven for about 25 to 30 minutes. I had a few pieces that were smaller than others so I had to remove some earlier.  Remove chicken from oven and allow to rest.

 

Put your broccoli in the cheese sauce mixture. Emulsify the broccoli and cheese until smooth.  Take pan  you cooked chicken in and turn on medium-high heat. Take zoodles and saute' until thoroughly warm. They should be tender at this point. 

Cut up bacon.  Plate with zoodles on bottom, cheese sauce next, then topped with chicken and bacon.  You can sprinkle some more cayenne and some more mozzarella for more color.

 

There you have it! It is a delicious dish without the noodles. Hope you give it a shot.
