Tzatziki Sauce

Since we smoked some Gyro meat (check out my recipes) you gotta have Tzatziki sauce!  So here's a simple and delicious recipe to go with your Gyro or for dipping vegetables.

Ingredients:

  • 1 Cucumber. peeled, grated and drained
  • 2 Cups Strained Greek Yogurt (Plain will work)
  • 2 Cloves Garlic minced
  • 2 Tablespoons Lemon Juice 
  • 2 Tablespoons Fresh Dill finely chopped
  • 1/2 Teaspoon Sea Salt
  • 1/4 Teaspoon Black Pepper

Directions:

  1. Peel and grate your cucumber and cut into thirds.
  2. Cut the flesh off cucumber and remove all seeds.
  3. Grate peeled, seeded cucumber by hand or in a food processor.
  4. Place grated cucumber on doubled paper towels or a clean dish towel .
  5. Drain the grated cucumber by wringing the towel to remove as much liquid as possible.
  6. Place drained cucumber into food processor along with Greek yogurt, garlic, lemon juice, sea salt and pepper.
  7. Blend or puree for 30 seconds to 1 minute.
  8. Finely dice your fresh dill.  Add to mixture and stir.
  9. Refrigerate for at least 3 - 4 hours before serving.

You can add your finely diced dill to the food processor too, I just like to add it after.
