Since we smoked some Gyro meat (check out my recipes) you gotta have Tzatziki sauce! So here's a simple and delicious recipe to go with your Gyro or for dipping vegetables.

You can add your finely diced dill to the food processor too, I just like to add it after.

Ingredients:
- 1 Cucumber. peeled, grated and drained
- 2 Cups Strained Greek Yogurt (Plain will work)
- 2 Cloves Garlic minced
- 2 Tablespoons Lemon Juice
- 2 Tablespoons Fresh Dill finely chopped
- 1/2 Teaspoon Sea Salt
- 1/4 Teaspoon Black Pepper
Directions:
- Peel and grate your cucumber and cut into thirds.
- Cut the flesh off cucumber and remove all seeds.
- Grate peeled, seeded cucumber by hand or in a food processor.
- Place grated cucumber on doubled paper towels or a clean dish towel .
- Drain the grated cucumber by wringing the towel to remove as much liquid as possible.
- Place drained cucumber into food processor along with Greek yogurt, garlic, lemon juice, sea salt and pepper.
- Blend or puree for 30 seconds to 1 minute.
- Finely dice your fresh dill. Add to mixture and stir.
- Refrigerate for at least 3 - 4 hours before serving.
