The Best EVER Potato Salad

So The Best EVER Potato Salad is a BOLD claim, but it's THE Most Requested Side Dish asked for from my Awesome sister in-law.  And not just by me!  Anyone that has tasted it, requests it! So if you start bringing this, or making this as a side dish, you too will be asked to bring it again and again!  She Finally decided to give ME the recipe so I gave it a shot and it turned out good!  Not Great like her's but it was still very delicious!  I was informed that my cubed potatoes were too large.  So for that Perfect cube, cube your potatoes to about a 1/2 inch by 1/2 inch.  So here we go.  It's a Dill Pickle Potato Salad.

Ingredients:

  • 3lbs potatoes (8-10) peeled and cubed
  • 6 hard boiled eggs
  • 2 medium dill pickles, finely chopped
  • 6 green onions
  • 3 celery stalks, chopped (Optional - Because not everyone likes celery)
  • 1-1/2 cups mayonnaise
  • 1/4 cup dill pickle juice
  • 1-1/2 tablespoons of yellow mustard
  • 1 teaspoon celery seed
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Directions:

  1. Peel and cube the potatoes to 1/2" x 1/2" cubes
  2. Cover with water and bring to a boil, simmer 20 - 30 minutes or until fork tender
  3. Drain potatoes and let cool in a large bowl
  4. Hard boil the eggs, peel, chop and add to potatoes
  5. Add onions, pickles and I added celery to potatoes
  6. In a small bowl add mayonnaise, pickle juice, mustard, celery seed, salt, pepper and mix well
  7. Pour sauce misture over potato mixture
  8. Mix well and refrigerate for at least 4 hours
  9. Serve
