This recipe is Delicious! If you are looking for a delicious and easy to make Mexican Rice Recipe, this is it! Now, we call it Spanish rice all the time but there is a difference, and it's mostly the seasonings. It's usually easy to tell the difference because Spanish rice is usually yellow in color and Mexican rice is usually red in color. But not matter what you call it, this recipe is Delicious!

Ingredients:
- 2 Tbsp Olive oil (if you are not dairy intolerant, you can use butter)
- 1 Onion chopped
- 1 Large garlic clove, minced
- 1 Cup long grain rice (I like Basmati)
- 2 Cups Gluten Free chicken broth
- 1 (10oz) can of Rotel or diced tomatoes with green chiles (not drained)
- 2 tsp Chili powder or adjust to your liking
- 1 tsp Salt
- 1/8 tsp Cumin
Directions:
- In a large skillet on medium heat add your olive oil
- Add onion, garlic and rice
- Saute until onions are tender and rice starts turning brown
- Slowly add in gluten free chicken broth
- Add Rotel or diced tomatoes with green chile
- Add cumin, chili powder and salt and stir
- Bring to a boil, then reduce to a simmer
- Cover and simmer for 13 to 18 minutes or until the liquid is absorbed
