Since it's Fat Tuesday, I decided to make a Muffaletta bread to make a muffaletta SMASH Burger! If you've ever been to New Orleans for Mardi Gras, hopefully you tried a muffaletta sandwich! They are so delicious! Even though this is not a traditional muffaletta sandwich, it is still amazing. And since I can't find Muffaletta bread in NM, I had to make my own muffaletta bread. And it came out amazing too. So here is the recipe for the muffaletta bread and be sure to check out my video.


Ingredients

  • 1 cup warm water 110°
  • 1 tablespoon sugar
  • 1/4 ounce package active dry yeast
  • 3 cups bread flour
  • 1 1/2 teaspoons salt
  • 2 tablespoons vegetable shortening (I used Crisco)
  • 1 teaspoon sesame seeds
  • 1 egg and water for egg wash

Directions:

  1. Add warm water to a measuring cup and stir in the sugar.  Stir in the yeast and set aside for 5-10 minutes or until foamy.
  2. While the yeast is developing, add the bread flour, salt, and shortening to the bowl of a stand mixer, fitted with a hook attachment.
  3. When the yeast is foamy, add it to the flour mixture and knead the dough on low to medium speed until the dough is fully incorporated and the dough is soft and smooth.
  4. Lightly oil a medium bowl and transfer the dough to the bowl, flipping it over once or twice to lightly coat with oil. Cover with a clean kitchen towel and put in a draft free space like your oven until doubled in size, about 1 1/2 hours.
  5. When the dough has risen, punch it down and transfer to a lightly floured surface.
  6. Section the dough into 2 equal parts to form 4 disc shape rolls/buns for your individual sandwiches.
  7.  Or for traditional muffaletta. Form the dough into a 10" diameter round disc and place on a baking sheet lined with parchment paper.
  8. Whisk 1 egg and water in a small bowl and lightly brush the top of the loaf with the egg wash. Sprinkle with sesame seeds and set aside in a draft free space like your oven to rise a second time until almost doubled in size, about one hour.
  9. Preheat oven to 425°. Place rack in the center of oven and bake loaf in the center of the oven for 10 minutes, then reduce the heat to 375° and continue baking for 20-25 minutes or until golden.

Let loaf cool before slicing.
