Ingredients:

  • Enough Leftover cooked turkey to make approx. 3 cups after ground up.
  • 1 cup Hatch green chiles.
  • 5 diced garlic cloves.
  • 1/2 diced onion or 1 medium.
  • SPG (Salt Pepper Garlic) to taste.

Beer Batter:

  • 1 Cup Flour
  • 1 Cup+ of your Favorite Beer (Pale ale or lagers work great)
  • 2 Tbsp Corn Starch
  • 1 1/2 Tsp Baking Powder (If using self rising flour, use 1/2 tsp)
  • 1 Tsp Salt and mix all the ingredients well, creating a thin pancake batter like batter.

When making the beer batter, keep adding a little bit of beer until you have a slightly thin batter. You don’t want to make it too thick.

Directions:

  1. Grind up your leftover turkey using a meat grinder. If you don’t have a meat grinder, you can use a food processor. Or click the link below to find one from my Amazon store.
  2. Add onions, garlic, and 2 tbsp of olive oil to your pan on medium heat.
  3. Add 2 tbsp of flour to make a rue. Be sure to cook your rue for 2 to 3 minutes.
  4. Add the onion, garlic rue you just made to the ground turkey
  5. Add green chiles, salt, pepper, and garlic. (SPG)
  6. Mix well and let sit covered in the refrigerator overnight.
  7. Roll mixture into about 1 inch balls
  8. Dip turkey balls in beer batter and deep-fry until golden brown.
