Easy, Cheesy pepperoni pizza kolaches recipe!

These cheesy, savory treats combine the classic flavors of pepperoni pizza with the soft, pillowy texture of kolaches. Perfect for snacks, parties, or on-the-go meals, this step-by-step guide will show you how to create the ultimate comfort food. Ingredients: (Makes 12 – 18 Kolaches)

  • 1 cup chopped pepperoni slices – More if you intend to make more than 6 kolaches.
  • 2 Tbsp of grated Parmesan
  • 1 1/2 -2 cups of shredded Monterey Jack or Mozzarella cheese. I like to use Chihuahua cheese.
  • 1/2 cup of pizza sauce or marinara sauce. (I use marinara sauce)
  • 2 tsp of Italian seasoning
  • 6 frozen dinner rolls (I use Texas sized frozen dinner rolls) Don’t worry, there will be more than 6 in a pack, and I guarantee you will use them all eventually because these are that good!
  • Butter to brush the top of the rolls after baking
  • Flour for rolling out the rolls
  • Cooking spray. I like using butter spray.

Directions:

  1. Take out the frozen dinner rolls and allow to thaw on the counter covered with cellophane sprayed with cooking spray (about 30).  The rolls should be cold and thawed.
  2. After 30 minutes, let rise for another 30 – 45 minutes. I place them in my oven set at bread proof. If you don’t have that feature, turn your oven light on.
  3. They are now ready to assemble. (take them out of the oven)
  4. Pre-heat your oven to 375 degrees Fahrenheit.
  5. Rough chop the pepperoni into pieces. You can use the mini pepperoni’s but I find them too thick.
  6. Next, add the pepperoni to a bowl and then add in the pizza sauce.
  7. Add the grated parmesan, shredded cheese, Italian seasoning, and then mix it up with a fork or spoon. Your filling is ready.
  8. Flour your countertop surface and roll out the dinner rolls to about 5 inches or the size of a corn tortilla.  Roll them out flat enough to fill without bursting the dinner roll.
  9. Spoon a couple Tablespoons of mixture.  The filling should be as full as possible that you can still fold over the roll sides without over stuffing.
  10. Fold up the sides over the filling and seal the dough inside.  Then, place on a parchment paper lined baking sheet.  Repeat until all 12 are on two baking sheets with about 1 1/2 inches between each roll.
  11. Spray lightly with cooking spray or butter spray so the tops will brown a little.  Then bake for 20 minutes or until the tops are lightly brown.  If you have 2 racks in your oven and bake both trays at the same time, bake for 10 minutes on the bottom rack then switch top to bottom, bottom to top bake 10 minutes more.
  12. When they are golden brown, take them out of the oven and allow them to cool for about 5 minutes before serving.  
  13. These easily re-heat from the fridge, wrap in a paper towel and heat for 1 minute in the microwave.  These will also freeze well in a freezer air-tight container or bag.
