There are a lot of dry rubs out there for specific smokes. And if you smoke a lot, you will know that it can really add up $$$. So here is my basic dry rub for just about everything that I smoke on my Pit Boss Pro Series 1100 smoker. You can use just this dry rub as is, but I also like to add salt and McCormick California Style Garlic Pepper prior to adding my dry rub. Which adds more layers of flavor. You can also modify this dry rub when you are making pork ribs. Just add this rub and some brown sugar to make the rub a little sweeter.
This dry rub to me, has just the right amount of sweet and heat without going overboard with either one. If you don't like it spicy, then reduce the amount of chili pepper or cayenne pepper. But this recipe won't make you running for a glass of milk. It has just the right amount.
This recipe makes about 22 to 24 ounces of rub and I keep it in an old spice container that you buy spices from Costco or Sams Club as you will see in the image.
Ingredients:
1/2 cup paprika
1/2 cup salt
1/2 cup granulated sugar
1/2 cup granulated garlic
1/4 cup granulated onion
1/4 cup red chili powder
1/4 cup cumin
2 tablespoons black pepper
2 tablespoons dry mustard
1 tablespoon cayenne pepper
Combine all ingredients and store in a container that will hold it.
