For this recipe you can spice things up by adding some cayenne pepper.  For really, really hot, add some diced jalepeno or try some specialty hot sauces.   

Salad Ingredients:

1 large head of Romaine lettuce
1 Cup celery, chopped
1 tbsp parsley, minced
2 green onions, chopped
can of drained mandarin oranges, or use a freshly peeled one. 

Sweet and Sour Dressing:

1/2 cup tarragon wine vinegar
1 tsp tarragon leaves
1/2 tsp salt
1/8 tsp pepper
3 tsp dijon mustard
1 cup vegetable oil
1/4 cup almonds, toasted and sliced

Directions

Mix tarragon leaves, salt, pepper, sugar and dijon mustard into a small bowl. Whistk vinegar into pieces until throughly mixed. Slowly add oil. Continue mixing until oil is completely belnded and dressing is a light creamy colour. Let sit for 20 minutes in refrigerator. Place sald on plates and sprinkle with dressing and almonds.
