Oh, this one is very tasty but not for those on a diet :)

New Mexico
Lasagna

 INGREDIENTS:

½ cup canola oil

16 corn tortillas

1lb. chorizo or hot Italian sausage

6 green onions
4 - 6 green chiles chopped

2 cups grated cheddar cheese

2 cups grated Monterey jack cheese
Can of sliced black olives

1lb. ricotta cheese

3 cups half and half

DIRECTIONS:

Fry each tortilla in oil for a few seconds to soften, drain on paper. Use a little oil to coat 9x13 baking dish. Heat oven to 350.  Brown and crumble sausage in a pan.  Chop green onions, green chiles

Arrange in layers, 4 tortillas, spread ¼ of the ricotta, ¼ of the sausage, sprinkle some green onions, green chiles, olives and cheese. Repeat to make 4 more layers. Pour half and half over all and bake until bubbly about 30-35 minutes.  Let stand 5 minutes before cutting.  Yummy!  Can be made ahead for a gathering and refrigerated 3 days or frozen 3 months.
