Authentic Flavor, Easy Method – Homemade Gyro Meat!
Ingredients for this delicious gyro meat recipe:
- 1lb Ground beef 80/20
- 1lb Ground Lamb
- 1 TBSP Onion powder
- 1/2 Tsp Garlic powder
- 1 Tsp Dried Rosemary
- 2 Tsp Oregano
- 1 Tsp Black pepper
- 1 Tbsp Kosher salt
- 1 Tsp Paprika
- 1 Tsp Cumin
- 1/2 Tsp Marjoram
- 1/2 Tsp Thyme
- 1/2 Tsp Red chili powder
- 1/8 Tsp Cinnamon
Directions:
- Place ground lamb and ground beef in a large bowl.
- Add in ALL spices and mix well.
- Place mixture in a food processor. This is 2lbs and fits in an 8 quart food processor. If you have a smaller food processor, do this in batches.
- Puree into a paste-like texture.
- Using plastic/cling wrap, lay a large enough piece to hold for a meatloaf size on your counter. Approx. 18 inches?
- Place the gyro meat paste mixture on the plastic wrap and form into a log shape pressing it firmly so there are no air pockets.
- Then wrap the plastic wrap around the gyro meat and twist the ends.
- Refrigerate for 2 – 3 hours or better, overnight so the seasonings can meld/marry together well. The key to an authentic gyro meat recipe is this resting time.
- Once cool, unwrap the loaf and place in a foil pan.
- I made this in a pellet grill, but this could be made in an oven.
- Place the now gyro meat into your 250 degree pre-heated pellet grill and insert a temperature probe.
- Bring the internal temperature up to 160 degrees. Will take approx. 1 to 1.5 hours
- Remove from the grill and let rest, refrigerate for 2 – 3 hours. Proper rest is essential for perfect gyro meat recipe results.
- Thinly slice your gyro meat and fry in olive oil to make a delicious gyro meat sandwich.
