Ingredients:
- Enough Leftover cooked turkey to make approx. 3 cups after ground up.
- 1 cup Hatch green chiles.
- 5 diced garlic cloves.
- 1/2 diced onion or 1 medium.
- SPG (Salt Pepper Garlic) to taste.
Beer Batter:
- 1 Cup Flour
- 1 Cup+ of your Favorite Beer (Pale ale and lagers work great)
- 2 Tbsp Corn Starch
- 1 1/2 Tsp Baking Powder (If using self rising flour, use 1/2 tsp)
- 1 Tsp Salt
When making the beer batter, keep adding a little bit of beer until you have a slightly thin batter. You don’t want it too thick.
Directions:
- Grind up your leftover turkey using a meat grinder. If you don’t have a meat grinder, you can use a food processor.
- Saute your onions and garlic in 2 tbsp of olive oil
- Add 2 tbsp flour to make a rue.
- Add onion, garlic rue to ground turkey
- Add green chiles and SPG.
- Mix well and let sit covered in the refrigerator over night.
- Roll into about 1 inch balls
- Dip turkey balls in beer batter and deep-fry until golden brown.
