Delicious Cheesy Chorizo and Green Chile Bombs Wrapped in Bacon!
Delicious Cheesy Chorizo and Green Chile Bombs Wrapped in Bacon! These chorizo green chile bombs are a fantastic meal, or they would also be a great appetizer for the Superbowl! Or any Gameday, event, occasion! I served these over mashed potatoes with red chile sauce and talk about a flavor explosion! These are a must make over and over again! And it only takes 4 ingredients, 5 if you add garlic! 6 if you want to spice it up! But you can just use green chiles, cheese, chorizo and bacon and you will have one delicious meal/appetizer!
Ingredients:
- 1 lb Ground Chorizo. Not the runny tube type. Like ground pork, but Chorizo
- 1 lb Bacon
- 1 14 oz Frozen Hatch Autumn Roast Green Chiles, drained. Roughly 1 and 1/4 cup diced green chiles
- 1 Cup shredded Monterey cheese. I’m using Chihuahua Mexican cheese. You can use our favorite.
- 1 and 1/2 TSP granulated garlic.
Directions:
- Add the green chiles, cheese, and garlic to a bowl and mix well.
- Take about a golf ball sized amount and press it together until you can form a ball.
- Set the cheese and green chile ball on a pan lined with parchment paper.
- Place the pan with the 4 cheese balls into the freezer for at least two hours.
- After a couple hours, take the cheese and green chile balls out of the freezer.
- Take your pound of chorizo and cut into quarters so you have 4 quarter pound pieces.
- Make a ball with each section of the chorizo, then take a pan or something to smash them flat, thin like a smashburger so you can wrap it around the frozen cheese balls.
- Wrap the chorizo around the cheese and green chile balls and seal them so the cheese won’t leak out.
- Wrap the chorizo, cheese and green chile ball with 2 two strips of bacon.
- You should now have 4 bacon and chorizo wrapped cheese and green chile bombs.
- Place in your pellet grill, or oven at 300 degrees f for about an hour and 15 minutes. If after one hour your bacon isn’t cooked. Turn up your heat to 320-325 for the last 15 minutes. These will be done when the bacon is cooked. No one wants raw bacon.
- Optional: You can add BBQ sauce to them at the end of smoking/cooking or dip them in a sauce of your liking.
