Pico de Gallo Salsa: This is one of my favorites to make and a great salsa to add to other recipes or to top your hamburgers and add to sandwiches.
 
Ingredients:


1 - 2 Tomato, seeded and finely diced (1 1/2 cups)
1 Bunch finely chopped cilantro (about a 1/2 cup)
1/2 Finely chopped medium white onion (About 1/2 cup. I usually eyeball it to match the amount of tomatoes)
1 Fresh jalapeno finely chopped, including seeds.
1/2 tablespoon freshly squeezed lime juice, or more if you like
1/2 teaspoon fine salt

Directions:

After you have all the ingredients chopped and diced, add them all to a bowl and mix well.  Very easy to make and everyone will love it!

Note: When picking jalapenos, if you notice that some are smooth, some are red, some look like they have stretch marks or lines on them.  This is how to pick how hot you want your salsa.  Red ones will be extremely hot!  Lots of stretch marks or lines on them are hotter than the ones with fewer lines. (see the image) and smooth ones won't pack too much heat. I like to find them with just a few lines as they are hot but not too hot.
