1 Large fish (eg/ Trout, Sole, Flounder) 

Scale and remove insides of fish. leave on tail and head, but remove the fins. Wash well in salt water. Drain. 

Stuffing:

  • 2 cups bread crumbs or croutons
  • 1 Onion, chopped fine
  • 1 green pepper, chopped
  • 1 stalk of celery, chopped 
  • 1/2 cup butter
  • 1 tsp seafood seasoning
  • salt and pepper

  1. Mix well and place in the fish cavity.  Sew the cavity closed with string or use scewers.  
  2. Sprinkle outside of fish with salt, pepper and seafood seasoning and rub with butter. 
  3. Wrap well in foil and bake at 350 F for 2 hours
  4. Serve whole on large platter (head and tail may be removed if desired and garnish with lemon wedges and vegetables)
