How to Make Delicious Spanish Rice: Flavorful, Easy, and Perfect for Any Meal

Ingredients:
- 2 TBSP Butter or vegetable oil if you need to be dairy free
- 1/2 Medium onion diced
- 1 Cup Basmati Rice or your favorite long grain rice
- 2 Cups chicken broth or beef broth for a richer flavor
- 1 10oz Can Rotel diced tomatoes with green chiles – You can use with Habanero if you like it spicy
- 2 TSP Red Chile Powder
- 1 or 2 cloves of garlic diced. I use the jarred garlic
- 1 TSP Salt
- 1/4 TSP Cumin
Directions:
- Melt 2 TBSP butter in a pan.
- Add diced onions and cook for 1 to 2 minutes.
- Add 1 cup rice and mix well with onions and butter/oil and cook until you see the rice starts to brown up a little.
- Add 2 cups of chicken stock, Rotel, Red Chile, Garlic and Cumin and mix well.
- Bring back to a simmer and simmer for 13 – 18 minutes
- Fluff with a fork
